Bolognese Recipe with Pasture-raised
Ground Pork
Ingredients
1 medium - large onion
1-2 cloves of garlic (preference)
1-2 medium - large carrots
2-3 celery stocks
beef or chicken stock
red or white wine
whole milk
parmesan rind

recipe:
+ add large chunks of garlic, onion, carrot, and celery into a food process. Pulse until it is finely chopped or chop by hand
+ add butter or olive oil to a heavy bottom pot with your celery, garlic, onion and carrots cook down your veggies until soft & translucent about 5 - 8 minutes (option to brown your meat in butter or olive oil then set aside and add back in)
+ add 3 TBS of tomato paste & cook down your veggies further
+ add in your ground pork & beef to brown
+ add a cup of red wine (a dry red wine is best or a light white wine) you can also use stock here instead, deglaze and reduce so that there is barely any liquid (10 - 12 minutes)
+ add in an entire jar of pureed tomatoes
+ Pour in a cup of chicken stock and a cup of milk, give it a mix, and let it simmer on low for 3 hours
+ option to add herbs like rosemary, a bay leaf + a parmesan rind as it simmers (use some butchers twine or a stainless steel mesh infuser so you donβt fill your pasta with leaves like I did lol)
+ remove the herbs and parmesan rind, and then add grated parmesan
+ add parmesan on top with your choice of pasta and enjoy!
