Pulled Smoked Ham Hock
Ingredients
celery
garlic
beer or stock
salt
pepper
onions
carrots
ham hock
recipe:
+ boil the ham hocks then rinse in cold water
+ place back in a pot with roughly chopped onion, garlic, carrots, a can of beer (brown ale or lager) or stock of your choice, peppercorn & salt
+ simmer for an hour and a half
+ leave them to rest and remove the outer layer of fat I prefer to keep the fat on for flavour its totally up to you!
save some of the stock from the pot with the vegetables & garlic and set aside in a separate bowl, you can puree this and use it as a gravy by adding 1tbs of cornstarch or flour & 1 tbs of butter
+ place in the oven in a baking dish covered in foil @ 300 degrees 2 1/2 -4 hours this is all going to depend on size - I would check on your hock after the 2 hour mark the meat should easily pull away from the bone with a fork with an internal temperature of 190–200°F (88–93°C) for a "pulled" texture
+ broil at the end for additional crispiness or take of the foil for the last 30 minutes of cooking and enjoy! 😊
